CROATIAN UPLANDS - BY THE GLASS
The climate and terroir of this area–nested between the Alps and Pannonia–favor the production of premium-quality, traditional-style sparkling wines: vibrant and refreshing white wines such as škrlet, pušipel (furmint) or kraljevina. Sauvignon blanc, just as in neighbouring Styria, offers some outstanding examples. This hills deliver some delicate rosé and elegant red wines of both local and international varieties, from fruity and juicy portugiser and to pinot noir.
Here you can even find increasingly rare ice wines or the ones from dried berries selection (TBA). Also present are the newly emerging aromatic amber wines, along with the ones aging in large clay pots - qvevri. Winemakers put significant emphasis on ecological production and the revitalization of indigenous wine varieties. The original founder of biodynamic agriculture, philosopher Rudolf Steiner, was born here, and his methods are followed by ever increasing number of producers.
CUISINE OF CROATIAN UPLANDS
This region offers wide range of authentic food for every season. The traditional cuisine, whether it be a simple rural lunch at the klet (basement or cellar) or fine style dining, carries a tradition that is cherished and interpreted by both the local inns as well as top-notch restaurants. Charcutterie, dry cured meats and cheeses are favourite starters to match the bubbles: zaseka or meso 'z tiblice... Poultry, meat or fish specialities are served with traditional mlinci, sauerkraut or turnip. True gastronomic icons of this area include štrukli, greblice, and similar delicacies often filled with cheese, cabbage, or walnuts. And for those with a sweet tooth, almost every town has its own authentic recipes, from kremšnita and zlevanka to sumptuous cakes. This hearty Central European cuisine perfectly matches the freshness and liveliness of local wines.
